Locust bean gum is a naturally extracted stabilizer, which thickens the ice cream base. The use of locust bean gum is especially important when making ice cream on smaller house hold ice cream machines - or even without an ice cream machine.

Locust bean gum is added to the ice cream mix before heating and while stirring.
